Ingredients:
1 cup fine sugar
2 prime vanilla beans
Directions:
Using a sharp knife cut each bean in half lengthwise and then cut the bean into 8-10 pieces. Place the sugar in a glass or ceramic jar, add the vanilla beans and stir into the sugar, cover with a lid and store for one week. Shake or stir the mixture occasionally.
Vanilla sugar should be stored in a dark, dry place such as a pantry. Do not store in a refrigerator or freezer as it will lose the flavor components. As he sugar is used top off the container with fresh sugar until the vanilla sugar loses the flavor.
Vanilla sugar can be used as a substitute for regular sugar in many recipes such as cookies, cakes or sprinkled on pancakes and waffles; also use in coffee, tea and hot chocolate.
